How to prepare lemon ice cream

Lemon ice cream is one of the most welcome preparations especially in the summer and the arrival of the heat.
Here is a simple recipe for making lemon ice cream:
Ingredients:
4 lemons (juice and zest)
500 ml of whole milk
200 g of sugar
250 ml of fresh cream
1 teaspoon vanilla extract (optional)
Instructions:
Start by grating the zest of two lemons and set aside. Be sure to grate only the colored outer part, avoiding the bitter white part underneath.
Squeeze the juice from all four lemons and strain it to remove any seeds or pulp. You can add some grated zest to the juice to increase the intensity of the flavor if you like.
In a saucepan, pour the milk and add the sugar. Heat over medium-low heat and stir until sugar is completely dissolved. Do not boil the milk.

Add the grated lemon zest to the sweetened milk and mix well. Leave to cool for a few minutes, so that the milk is soaked in the lemon flavor.
Add the lemon juice to the milk and lemon zest mixture and mix well. Make sure it is evenly mixed.
At this point, you can add vanilla extract to enhance the flavor. This step is optional and depends on your personal taste.
Pour the fresh cream into a separate bowl and whip it to stiff peaks using an electric whisk or hand whisk. Make sure the cream is well whipped and has a fluffy texture.
Add the whipped cream to the milk and lemon mixture and mix gently with a spatula, making movements from the bottom up. Try to keep the texture airy as much as possible.
Pour the mixture into the ice cream maker and start the ice cream process according to the manufacturer’s instructions. If you don’t have an ice cream maker, you can pour the mixture into a bowl and place it in the freezer. Stir the ice cream every 30-60 minutes with a fork to prevent ice crystals from forming, until it has reached the desired consistency.
Transfer the lemon ice cream to a sealed container and place it in the freezer for at least 2 to 4 hours, or until completely hardened.
Once the lemon ice cream is ready, you can serve it in cups or cones and enjoy it as you wish.
