How to prepare Pistachio ice cream

The preparation of pistachio ice cream requires few ingredients and a little patience. Here is a basic recipe for making pistachio ice cream:
Ingredients:
– 250 g of unsalted shelled pistachios
– 500 ml of whole milk
– 150 g of sugar
– 4 egg yolks
– 200 ml of fresh cream
– Vanilla extract (optional)
– Green food coloring (optional, to intensify the color)
Instructions:
1. Preparation of pistachios:
– Finely chop the shelled pistachios. You can do this using a mixer or mortar.
– If you want to get a more intense color, you can add a few drops of green food coloring to the chopped pistachios.
2. Preparation of the ice cream base:
– In a saucepan, heat the milk over medium heat without letting it boil. You can add some vanilla extract for flavor if you like.
3. Yolk Cream:
– In a bowl, beat the egg yolks with the sugar until the mixture is light and frothy.
– Gradually pour the hot milk into the yolk-sugar mixture, stirring constantly to prevent the yolks from cooking. This step is important to avoid the formation of lumps.
4. Cooking cream:
– Transfer the mixture to the clean saucepan and cook over medium-low heat, stirring constantly with a wooden spoon, until the cream thickens slightly. This process should take about 5-7 minutes. The cream must never boil.
5. Cooling:
– Once thickened, remove the cream from the heat and let it cool completely. You can speed up the process by placing the saucepan in a basin of cold water and stirring occasionally.
6. Combining the Pistachios and Cream:
– Once the cream has cooled, add the chopped pistachios. Mix well so that the pistachios are evenly distributed.
7. Whipping the cream:
– Whip the fresh cream until you get soft peaks.
8. Combination of ingredients:
– Gently fold the whipped cream into the cream and pistachio mixture. Mix with delicate movements from bottom to top to keep the ice cream as soft as possible.
9. Freezing:
– Transfer the mixture to an ice cream maker or freezer container. If you’re using a container, stir the mixture every 1-2 hours during the first 4-6 hours to prevent ice crystals from forming. Leave the ice cream in the freezer until it reaches your desired consistency.
10. Service:
– Once the pistachio ice cream has reached the desired consistency, you can serve it in bowls or ice cream cones. Garnish with additional chopped pistachios if you like.
