How to make hazelnut ice cream

The preparation of hazelnut ice cream is a relatively simple process, but it requires attention and precision to obtain a delicious and creamy result. Here is a basic recipe for making hazelnut ice cream:
500 ml of whole milk
200 ml of fresh cream
150 g of sugar
100 g of toasted and shelled hazelnuts
3 egg yolks
1 teaspoon vanilla extract (optional)
A small amount of salt
1. Prepare the ingredients:
– Finely chop the toasted hazelnuts. You can do this using a food processor or mixer.
– In a separate bowl, lightly whisk the egg yolks.
2. Heat the milk and cream:
– Start by heating the milk and cream in a saucepan over medium heat. Do not boil the mixture, but heat it until small bubbles begin to form along the edges of the pot.
3. Mix Egg Yolks:
– While the milk and cream are heating up, gradually pour a little of the hot mixture over the beaten egg yolks, stirring constantly. This step, called “temperature”, prevents the yolks from congealing due to the heat.
4. Combine the ingredients:
– Pour the egg yolk and milk mixture into the saucepan with the rest of the milk and cream. Also add sugar and a small amount of salt. Mix well.

5. Cooking over medium-low heat:
– Cook the mixture over medium-low heat, stirring constantly with a wooden spatula or spoon. Continue cooking until the mixture thickens slightly and coats the back of the spatula. Do not boil, otherwise the eggs may curdle.
6. Add Hazelnuts:
– Remove the pot from the heat and add the chopped hazelnuts to the mixture. Mix well to distribute them evenly.
7. Cooling:
– Let the mixture cool to room temperature for a few minutes, then cover with plastic wrap and refrigerate for at least 4 hours or preferably overnight. This step helps develop the flavors and completely chill the ice cream base.
8. Ice cream maker:
– Pour the ice cream base into the ice cream maker and follow the manufacturer’s instructions for preparation. If you don’t have an ice cream maker, you can place the mixture in the freezer and stir it every 30 to 60 minutes to prevent ice crystals from forming.
9. Maintenance and Service:
– Transfer the hazelnut ice cream into an ice cream container and leave it to ripen in the freezer for a few hours before serving. This way you will get a better texture.
10. Serve:
– Serve the hazelnut ice cream with additional chopped hazelnuts or decorations of your choice.
Remember that making ice cream takes patience and practice. If you follow the instructions carefully and are careful to avoid overheating the mixture, you should be able to get delicious homemade hazelnut ice cream.
