How to make plum syrup

Plum syrup is an excellent preparation to be used in drinks but also to be added to ice cream or desserts.
To make plum syrup, you’ll need the following ingredients and utensils:
Ingredients:
500 grams of ripe plums
300 grams of sugar
500ml of water
Juice of half a lemon (optional)
Tools:
A knife
A large pot
An immersion blender or a traditional blender
A wooden spoon
A sieve or clean tea towel
Sterilized glass bottles with airtight caps
Here are the steps to make plum syrup:
Wash the plums under running water to remove any dirt residue. Remove the pits and cut the plums into small pieces.

In a large saucepan, combine the cut prunes, sugar, and water. If you want a touch of acidity, you can also add lemon juice.
Bring the water to a boil over medium-high heat. Then reduce the heat and simmer for about 20-30 minutes, or until the prunes have softened and the liquid has reduced.
Once cooked, remove the pan from the heat and leave to cool for a few minutes.
Using an immersion blender or traditional blender, puree the cooked prunes until they are smooth and homogeneous. If you prefer a thicker syrup, you can strain the mixture through a sieve or clean dish towel to remove any residue.
Pour the plum syrup obtained into sterilized glass bottles and close the caps hermetically.
Store bottles in a cool, dark place, such as a pantry, until ready to use.
Prune syrup can be used to sweeten drinks such as tea, lemonade or cocktails, or as a topping for ice cream, yogurt or pancakes. It keeps well for several weeks if kept in a proper environment. Remember to shake the bottle before using, as the syrup tends to separate slightly.
