How to prepare black cherry syrup

Here is a simple recipe for making cherry syrup:
Ingredients:
500 grams of fresh cherries or cherries in syrup
200 grams of sugar
250 milliliters of water
Juice of half a lemon (optional)
Instructions:
If you’re using fresh cherries, start by washing them thoroughly under running water to remove any dirt residue. Also remove the stems.
If you’re using cherries in syrup, drain the cherries from the syrup and set them aside for now. You can save the syrup for other preparations or use it in the process of making tart cherry syrup.
In a medium-sized saucepan, combine the sugar and water.

Bring to a boil over medium heat, stirring occasionally to completely dissolve the sugar.
Add the cherries to the pot and reduce the heat to low. Let the cherries cook for about 10-15 minutes, stirring occasionally. During cooking, the cherries will release their juices and a thick syrup will form.
If you want a more acidic taste, you can add the juice of half a lemon during cooking. This will also help preserve the color of the cherries.
After cooking, remove the pot from the heat and allow the syrup to cool for a few minutes.
Once the syrup has cooled slightly, you can pass it through a fine sieve or cotton towel to remove any solid residue.
Transfer the tart cherry syrup to a sterilized glass bottle or airtight container. You can keep it in the refrigerator for several weeks.
Cherry syrup is perfect for flavoring drinks, ice creams, yoghurts, desserts and much more. Experiment and enjoy your homemade syrup.
