The Hairy parchment or leaf fungus, wax fungus, shelf fungus (Stereum hirsutum (Willdenow Ex Fries) S.F.Gray, 1821) is a mushroom belonging to the Stereaceae family.

Etymology –
The generic term Stereum already reveals some of its most obvious characteristics. The genus Stereum derives from the Greek stereós, meaning “hard,” “solid,” or “rigid,” referring to the leathery consistency of its fruiting bodies, similar to small crusts or shelves adhering to the wood.
The specific epithet hirsutum, on the other hand, derives from the Latin hirsutus, meaning “shaggy,” “covered with rough hairs,” and perfectly describes the upper surface of the mushroom, characterized by fine but visible hairs that make it easily recognizable even from a distance.

Geographic Distribution and Habitat –
Stereum hirsutum is one of the most common wood-dwelling mushrooms in our forests and is considered a species with an almost cosmopolitan distribution. It is found throughout much of Europe, Asia, Africa, North and South America, Australia, and New Zealand. In its ideal habitat, it can be found virtually anywhere deadwood trunks and branches are available.
In Italy, it is a common presence in broadleaf forests, parks, along paths, and even in gardens where mature trees or decaying wood are present.
It is a saprotrophic fungus, meaning it feeds on dead organic matter. Its ecological role is fundamental: it colonizes fallen wood and, through its enzymes, degrades lignin and cellulose, causing what is known as white rot. In this way, it contributes to the transformation of dead trunks into humus and returns important nutrients to the soil.
It favors broadleaf wood such as oak, beech, and other forest species, although it can occasionally appear on conifers. It generally grows on branches, stumps, and already weakened or dead trunks, often forming numerous close, overlapping shelves.
It can appear in any season: its fruiting bodies are able to survive for a long time and can remain visible even after winter, continuing to grow in subsequent years.

Recognition –
Stereum hirsutum is a small mushroom that is unlikely to be confused with the classic “cap mushrooms” sought by foragers. It has no stem and does not emerge from the ground: it grows directly from the wood in the form of adherent crusts or small shelves.
The fruiting body is thin, generally ranging from a few millimeters to 4-5 centimeters wide, with a reduced thickness. When young, it appears almost like a patch adhering to the bark; later, it develops small semicircular or shell-shaped expansions, often overlapping like roof tiles.
Its texture is one of its main characteristics: when fresh, it is elastic and leathery, while when dry, it becomes hard and similar to leather or parchment.
The upper part of the mushroom is the one that allows for initial recognition. It is covered with dense, rough hairs, with a velvety-shaggy appearance. The color varies greatly depending on age and environmental conditions: it can be yellow, orange, brown, grayish, or have greenish hues due to algae growth on the surface.
The cap often displays clear concentric zoning, with darker bands alternating with lighter ones. The margin, generally younger, is lighter and often wavy.
The lower part, called the hymenophore, is smooth and poreless. This characteristic distinguishes the Stereum genus from many other wood-dwelling mushrooms that have tubes or pores. In young specimens, it is bright yellow-orange in color, while with age it tends to beige, ochre, or brown.
The flesh is very thin, yellow-brown, and has no particular odor or flavor.
Microscopically, it has white, smooth, cylindrical-elliptical spores and a system of hyphae characteristic of the genus.
Identification is not always easy because similar species exist. Stereum subtomentosum has a less hairy surface and generally more delicate colors. Some species, such as Stereum sanguinolentum, Stereum rugosum, and Stereum gausapatum, can turn reddish when rubbed, a characteristic absent from Stereum hirsutum. Stereum ochraceoflavum can also be confusing, but it has paler colors and a less hairy appearance.

Cultivation –
Stereum hirsutum is not cultivated for food, as it is not an edible mushroom and its fruiting body is too thin and tough for any culinary use.
However, its natural “cultivation” continues to occur in forests: it is one of the pioneer organisms in the colonization of dead wood and plays a key role in decomposition processes.
Precisely because of this ability to transform wood, the species has been studied in biotechnology research. The enzymes produced by Stereum hirsutum may have applications in lignin degradation processes and in the study of the biological treatment of certain pollutants.
The species is also of scientific interest for the production of numerous secondary metabolites, i.e. natural molecules produced by the fungus and not directly involved in growth, some of which have shown biological activities worthy of further investigation.

Uses and Traditions –
Stereum hirsutum belongs to the Stereaceae family and is one of the most representative species of the Stereum genus. Its taxonomic history dates back to the late 18th century: it was initially described in 1787 by Carl Ludwig von Willdenow as Thelephora hirsuta, and was later transferred to the Stereum genus by Christian Hendrik Persoon in 1800.
Unlike many more showy and sought-after mushrooms, this species has not developed true popular names in Italy, precisely because it has no nutritional value. In other countries, it is known by names that recall its appearance: in English, it is also called “hairy parchment,” while in German, it is called “Striegeliger Schichtpilz.”
From a culinary standpoint, Stereum hirsutum has no value: it is not strictly poisonous, but is considered inedible due to its woody consistency and the very small amount of available pulp. Its true value is ecological. It is a small “forest recycler”: without mushrooms like this, dead wood would accumulate for much longer periods of time, and the natural cycle of organic matter would be slowed.
In recent decades, it has attracted scientific research interest for certain substances isolated from its tissues. Among these is hirsutic acid, a compound belonging to the sesquiterpene family, studied for its antimicrobial activity and potential pharmacological applications.
Numerous other bioactive compounds produced by species of the Stereum genus have also been identified, making these mushrooms interesting not only from a naturalistic but also chemical and biotechnological perspective.
A curious fact concerns its relationship with other fungi: sometimes Stereum hirsutum can itself become a “host” of parasitic species, such as certain gelatinous fungi from the Tremellaceae group, which penetrate its hyphae to obtain nourishment.

Preparation –
Stereum hirsutum is not used in cooking, and there are no traditional preparations associated with this species.
Its thin yet extremely tough structure makes it unsuitable for consumption: even young specimens lack a pleasant texture and do not provide a significant amount of flesh.
The correct preparation of this mushroom therefore involves observing and recognizing it in its natural environment. It is an ideal species for learning about wood fungi, as it clearly demonstrates how the fungal world is not only composed of edible species, but also of organisms essential to the functioning of ecosystems.
Observing a colony of Stereum hirsutum on an old log means witnessing an essential phase in the life of the forest: the phase in which dead matter is slowly transformed and returned to nature.
